DiverXO is a Michelin 3-star in Madrid that’s hard to get a reservation (plus it’s like 400 euro), but they have an Spanish-Asian fusion offshoot called StreetXO.

  • Dumpling Pekinés: Crispy pig's ear / strawberry hoisin sauce / aioli / pickle slices
  • Nigiri Croqueta de la Pedroche: Kimchi / sheep's milk / tuna sashimi/Lapsang Souchong tea
  • Lasaña Koreana: Wonton and Galician Aged Beef with shiitake mushrooms / pickled spicy marinated tomatoes / cardamon bechamel
  • Ramen Cocktail: Shiitake sake / coriander cordial / spicy vermouth / yuzu

Evening

Not pictured, but drank a bunch of wine at the hostel and then went out for Indian food with a Texan and a someone from India who lives in the UK. The Indian woman was unhappy that the street full of Indian restaurants were actually all Bangledeshi. The food was ok, but had a good time.
